Food from Fuerteventura

In the arid landscape of Fuerteventura, where rain is a gift that the heavens hand out only from time to time, cultivating anything is a miracle. In essence, Fuerteventura flavours are those of salt and pastures, fish and goats, of the produce of the sea and the fruits of animal farming. Fuerteventura’s gastronomy comes from the inventiveness of generations of islanders, those that originally inhabited the island and those that came after them, who managed to get the best out of the limited possibilities of the land. It was in these circumstances that the extremely simple but flavoursome fare took form. A cuisine with two main sources: goats and fish. From the mar are the sea bass, dried or otherwise, the eels, groupers, samas, and red mullet. It is the origin of the grey mullet and molluscs such as mussels, topshells or limpets that fill our dishes. However, is there is one product that is so exquisite that it has crossed our borders to attain international recognition, that is, cheese, which since 1996 bears a Designation of Origin that guarantees its quality.

Gofio Escalado

Ingredients:1 litre strained fish stock, 1 small bunch of mint, 0,25 kg of gofio (cornmeal) Preperation: Place the gofio in a dish with the mint and add the boiling stock slowly, stirring continuously to prevent lumps. Vegetable or soup stock can also be used. It can be served with red onion, previously soaked in vinegar and water, or sprinkled with fired garlic

Papas Arrugadas (wrinkeld patatoes)

Ingredients:1 kg of small potatoes , ½ kg of sea salt

Preparation:Wash the potatoes well. Place the potatoes in a large pot with a lid. Cover with water. Add the salt. Cover Place on the heat. Cook on a high heat. After cooking for 10 minutes test to see if cooked using a sharp knife. If they are not, cook for a fre minutes longer. Once cooked, drain without removing the lid completely from the pot. The secret is too hold the pot with one hand and the lid with the, leaving just enough opening to drain the water from the pot. Return the pot to the stove and turn off the heat. Leave the pot on the stove with the lid on. Every tow or three minutes shake the pot, with the lid on. After ten minutes, take the lid off the pot and the potatoes should be dry, wrinkled and white with salt.

Sancocho Canario

Ingredients: 1 kg of sea bass, 1 kg of potatoes, 1 kg of yellow sweet potato

Soak the sea bass for at least 12 hours, changing the water three times. Peel the potatoes and the sweet potatoes, cut them up into large pieces and place in a tall pot. Cover with the fish cut into pieces and cook until the potatoes and sweet potatoes are soft. Meanwhile, prepare the mojo picon, (spicy sauce) and serve together with the pella de gofio (roasted cornmeal cake).

QUESOS MAJOREROS

Fuerteventura, an island of extensive golden sandy beaches and wide plains, caressed by the sun and trade winds, apart from an important tourist destination, is also a land of millenary farming traditions, and the island goat’s cheeses are renowned both throughout the archipelago internationally. The rich pastures wrested from the dry land and the unsurpassable characteristics of the island goat are the fundamental factors that determine the quality of this cheese. The exquisite Majorero cheese is handmade using traditional methods passed down from generation to generation by the island’s goatherds from pre-Hispanic times. The cylindrical shaped cheeses measure from 6 to 9 cm in height by 15 to 35 cm in diameter and they usually weigh between 1 to 6 kilograms. They are distinctively marked on the outside with the indentations and grooves left by the palm and wooden moulds.

To guarantee the excellence of Fuerteventura cheeses, the Majorero Cheese Designation of Origin has been created, which control strict compliance with all the regulations as regards origin and the optimum quality of the raw materials, as well as the manufacturing and curing processes, all of this carried out with absolute guarantee of hygiene.

The determination of the islanders to optimise their product has made it not only the first cheese in the Canary Islands with Designation of Origin, but also the first goat’s cheese in Spain to be given this certification. The cheeses guaranteed by the Majorero Cheese Designation of Origin are the best in Fuerteventura and are recognisable on the market by the commercial label of the producer, and the back label of the Designation, with its control number.

Goat's Cheese Cheescake

Ingredients: 300 gr. of short crust pastry, 100 gr. of sugar, 3 egg yolks, 2 gr raising agent, 500 gr. goat’s cheese curd, 50 gr. butter, 30 gr. corn flour, 3 egg whites

Cheesecake.

Beat the cheese curd until creamy; add the butter, the sugar and the egg yolks. Beat together and add the raising agent. Beat the egg whites until stiff and fold into the mixture. Line a cake tin with the short crust pasty and ¾ fill with the mixture. Bake in a medium oven (160º-175ºC/325º-350ºF/gas mark 3-4), for 30 to 40 minutes until golden.
